Method
  1. Preheat oven to 180 degrees Celsius.
  2. Heat the oil in a saucepan over a medium heat. Add garlic and onion and cook for 2 minutes.
  3. Add capsicum and cook for another 2 minutes.
  4. Stir in beans, tomatoes and herbs.
  5. Remove from the heat and divide mixture evenly between 4 ramekins.
  6. Crack an egg into the centre of each ramekin and sprinkle with grated cheese (if using).
  7. Bake for 15 minutes or until the eggs are cooked to your liking.
