- In a large salad bowl, mix together the beans, chickpeas, capsicum, cucumber, tomatoes, red onion, corn and parsley.
- In a small bowl, combine the lemon juice, olive oil, salt and pepper to make a dressing.

You can replace the chickpeas in this recipe with 1 cup of chopped cooked green beans. Fresh or frozen beans work well.
