Method
  1. Bring a large pot of water to the boil.
  2. Add the cauliflower and boil for 5 minutes.
  3. Add the frozen vegetables (if using) and boil for another 5 minutes.
  4. Drain the vegetables and mash lightly with a fork.
  5. In a large bowl, mix together the flour, cumin, coriander and turmeric.
  6. Whisk in the eggs and vegetables. If batter is too wet, add a little more flour.
  7. Heat non-stick fry pan over a medium heat. Spray pan with a little oil.
  8. Spoon mixture into pan to form fritters (about 2 tablespoons per fritter).
  9. Cook fritters until golden brown on both sides and cooked through.
  10. To make the sauce - mix together the natural yoghurt, garlic and fresh coriander or mint.
