- Mix together the oats, coconut, seeds, nuts and cinnamon.
- Place the mixture in a large shallow roasting pan. Spray with a little cooking oil.
- Bake at 150 degrees Celsius for about 25 minutes or until golden and toasted. Stir occasionally to ensure even cooking.
- Remove from oven and allow to cool completely.
- Stir through sultanas and chopped dried apricots (or other dried fruit).
- Store in a large airtight container. Makes about 8 cups - which is 16 serves of ½ cup.
Look out for bulk bin specials on dried fruit, seeds and nuts at your local supermarket so you can buy the ingredients for less money.
