- Mix dried kawakawa, boiling water and manuka honey together in a cup. Infuse and allow to cool down.
- Pour kawakawa mixture into glass jug, fill with ice and top up with sparkling water.
- Serve with slices of lemon (if using).
To dry kawakawa leaves quickly:
- Wash and pat dry kawakawa leaves.
- Place inside a folded paper towel and microwave on HIGH for 30 to 40 seconds.
- Unwrap and let cool.
- Leaves can be stored in an airtight container for use later.
