- Turn oven on to 160 degrees Celsius.
- Chop kūmara into chips or wedges.
- Oil and season kūmara.
- Spread on an oven tray lined with baking paper.
- Cook in oven for 12 to 15 minutes depending on thickness of chips or wedges. Remove and set aside.
- De-skin and dice avocado (you can mash if you like).
- Finely chop red onion and tomato and add to avocado.
- Add the juice of ½ lemon.
- Add the herbs. Season both and serve.
