Method
  1. Turn oven on to 160 degrees Celsius.
  2. Chop kūmara into chips or wedges.
  3. Oil and season kūmara.
  4. Spread on an oven tray lined with baking paper.
  5. Cook in oven for 12 to 15 minutes depending on thickness of chips or wedges. Remove and set aside.
  6. De-skin and dice avocado (you can mash if you like).
  7. Finely chop red onion and tomato and add to avocado.
  8. Add the juice of ½ lemon.
  9. Add the herbs. Season both and serve.
