- Turn on and set oven at 160 degrees Celsius.
- Thinly chop silverbeet or spinach.
- Peel and grate carrot, kūmara, potato and onion.
- Place mince in a bowl and add all the vegetables.
- Add the egg and breadcrumbs as well as the sauces.
- Season with salt and pepper.
- Mix all together and roll into balls the size of a ping pong ball.
- Place in an oven tray (lined with baking paper).
- Bake in the oven at 160 degrees Celsius for 15 minutes.
- Add oil to a hot pan.
- Saute onions and herbs.
- Add tomatoes.
- Add ½ cup of water, let boil on medium heat for 10 mins.
- Remove meatballs from the oven and add to sauce in the pan, cover and simmer on low heat for a further 5 minutes. Season and serve.
