Method
- In a large bowl mix the flour, rolled oats, baking powder and salt together with a fork.
- In another bowl mix together the eggs and brown sugar.
- Add this to the dry mixture with the banana and milk. Mix well.
- Gently stir in the blueberries.
- Heat a non-stick frying pan over a medium heat.
- Spray with a little oil and add ¼ cup of the mixture to the pan.
- When bubbles start to appear, turn the pancake over and cook until golden brown. It will only take a few minutes for each pancake to cook through.
- Repeat with the remaining mixture.
- Serve with chopped fruit, yoghurt and a little maple syrup.
