Method
  1. Slice chicken into bite-sized pieces.
  2. Heat oil in large saucepan over a medium heat. Add chicken and cook for 2 minutes.
  3. Add onion, garlic, spices and rice. Cook for a further 2 minutes.
  4. Add canned tomatoes, water and carrots.
  5. Cover and simmer on a low heat for around 20 minutes. Stir regularly so it doesn't stick to the bottom of the saucepan.
  6. Add frozen peas, carrots and corn. Cook for another 5 minutes.
  7. Serve with green salad or steamed green vegetables.
